Cinnamon Roll French Toast

 

One Easter Morning, we thought it would be so fun to make something fun, different and sweet to celebrate. Cinnamon Rolls came to mind, but as we started looking up recipes, we knew we didn't have all of the ingredients and did not want to head to the store...so, we improvised and came up with French Toast Cinnamon Rolls with things we had on hand, and it's been a tradition ever since!! It is easy and fun and now a birthday breakfast favorite too! 

What you Need:

French Toast:
Bread 
Three Eggs
Vanilla
Cinnamon
Milk (optional)

Cinnamon Topping:
Butter
Sugar
Cinnamon

White Glaze:
Butter
Powdered Sugar
Vanilla
Hot Water 

Basically, cinnamon, sugar, and butter...what more could you need! 

For the French Toast, combine eggs, about a tsp of vanilla, a couple shakes of cinnamon, and about a tbsp of milk (optional) and whisk together...Then put each piece of bread in mixture and coat both sides before placing on the griddle or skillet (We use an iron skillet). Flip each side when it looks toasted and butter after you take it off the griddle. 

For the Cinnamon Topping, combine about 3 tbsp of melted butter, 1/4 cup sugar and a tbsp of cinnamon together until the consistency is what you need for your french toast. (You can always add more of any ingredient) 

For the White Glaze, combine 2 tbsp butter, 1/2 cup powered sugar, 1 tsp vanilla, and 3-4 tbsp hot water until the consistency is slightly liquid to make the glaze. (You can add more water if not liquid enough or more powdered sugar if too liquid)  

Then plate the French Toast, add your cinnamon topping, then drizzle your white glaze, and you have about the most scrumptious (and sweet) breakfast for your Easter morning! And of course, you can make this any morning! 

Now, for the bread, we get ours from Berlin Bakery, and we can't rave enough about this Bakery. We get almost all of our flour products here. They use Spelt flour, which is an ancient grain, and doesn't affect our stomachs/digestion the same as normal processed wheat does. The Country Italian is our FAVE and makes for the best French Toast! (I had gotten this out of the freezer that morning, which is why it's a little frosted...I recommend getting it out at least the night before for French Toast.)

For the Griddle, we use an iron skillet. We found this at an antique store here in Nashville and seriously use it for SO many things. Pancakes and French Toast definitely wouldn't be the same without it!

We also have talked about substituting out sugar for coconut sugar or honey as well. That would make this a little more health-friendly, but for having it once or twice a year, we love that it's a fun splurge.
