Friday Favorites - Walking, Road Trips, and A New Breakfast

Happy, happy FRIDAY, my friends!!! I hope you guys have had such a great week of March! We have just been l-o-v-i-n-g the spring weather that has been heading our way. Add in the "extra" daylight at the end of the day, and we've been loving being out with our neighbors every evening. Today I just have a few simple and fun Friday Favorites to share! Little small joys from our past week or so! I hope you've been finding them too in your days! Here are a few for your Friday morning!! 




One is this little cutie and morning walks... It feels like we've just hit our groove again with some walks and working on our 31 miles this month, and I just couldn't love them more. I'm working on my 100 miles before and after "baby" post soon, and it's been fun thinking back on all the miles that this little stroller and me and these two littles have put in... Let's just say, we know our neighborhood streets (and close parks) so well after these past few years!! 


Another favorite is road tripping with this crew... 
Especially to this place! We love visiting my parents in Louisville and going to "Nana and Papa's" house is a treat for us all. This weekend we had the best spring weather, got in lots of outside time and family time, and loved it all. Pierce and I were saying on the way home that we've put in a lot of miles road-tripping with these littles, and we've learned a lot on the way, but we're thankful for the "windshield time" we get on trips like this as well! 


Another thing that has become a favorite around here is this simple breakfast that has become a little bit of a "Thursday morning tradition." Pierce works from home on Thursdays, and they have always (and hopefully will always continue to be) a favorite day of the week for us, so one day I randomly decided to try a new simple breakfast that morning, and several weeks later, I have tweaked it a bit, and it's become a little favorite around here... It's a "grain-free" take on German pancakes and mainly four simple ingredients (with a few I've added over the past few weeks.) 
I snapped this picture one morning before Jane and I started putting it together. You can find recipes for "German pancakes" all over, but I ended up making ours a bit smaller and have just been doing about 2 tbsp butter put in a smaller glass pan as the oven preheats to 400º. I add three eggs, 2/3 cup milk, and 2/3 cup protein powder to the blender, along with a tiny bit of vanilla (and recently I have started adding a tiny bit of apple cider vinegar, which I think helps make it a little bit "fluffier" and a tiny bit of maple syrup just to sweeten it a little). Then just pour the blended mix into the melted butter, cook for 20 minutes, and we have found that when we add strawberries to the top (and sometimes peanut butter) it's a simple and protein packed breakfast that we've come to love on Thursday mornings!! 


In my "Motherhood post" a few weeks ago, I mentioned a sweet devotion that a mentor gave recently and she talked about investing in your little girl in small ways that can make a big difference. One of her examples was, "If you see a little purse while you're out that you know your little girl would just love to have, buy it for her and have it waiting on her bed when she gets home." Well, fast forward a few weeks later and I happened to see this little purple purse at a consignment sale, and I knew Jane would love it. It was a sweet little gift "just because" and it became an instant favorite for her and she loved having a purse "just like Mommy's" to take into the stores. I'm thankful for her advice and for $3 that I normally would have overlooked, but that has been such a special part of the past few weeks with Jane! 


And lastly, Spring Break. Speaking of little gifts, I knew from my teaching days that little gifts "just because" are sometimes the sweetest to receive, so while Jane was at her Mother's Day Out last week, I grabbed two small gift cards at HomeGoods while I was making a return, cut a few pieces of card stock and tied a little piece of twine around it as a little "Thank You" before Spring Break. 
This time of year will always remind me of my teaching days and a favorite will ALWAYS be these two dear friends and my years teaching with them. March 10th, 2022 marked my last day of teaching before Jane, and it's been sweet to think back on that season this week.
