From The Riddick Kitchen - Chicken Skillet Nachos

Oh this is seriously one of our very favorite dishes - so much so that we had it last night for dinner! 
It's so simple, but packed with so many veggies and can kind of be made for what you need. We've made this for dinner for just me and Pierce, when friends have come over, or even for our small group dinner - it's just an easy crowd favorite!! 

We got this idea from Defined Dish - her Turkey Taco Skillet Bake.

Ingredients:

2lb Chicken Breast
1 Green Pepper
1 Red Pepper
1 Orange Pepper
1 Zucchini 
1 White Onion 
1 clove Garlic
Tomato Paste (2 tbsp)
Chili Powder (2 tsp)
Paprika (1 tsp)
Cumin (1/2 tsp)
Salt
Pepper
Olive Oil
Tortilla Chips (We love Siete)
Mexican Shredded Cheese
Sour Cream (Or Greek Yogurt - we love both!)

Directions:

We cook this whole dish in one iron skillet - it's a lot of prep in cutting everything, but then it's simple to put it all in and let it simmer. 

We dice the peppers, zucchini, onion and mince the garlic. Then put all the vegetables in the iron skillet with some Olive Oil and salt and pepper. Let those cook about 5 minutes until they're a little softer. 

We cut the chicken into cubes and add that to the skillet along with a little more salt and pepper. As the chicken is cooking, we add the chili powder, paprika, and cumin. Then add the 2 tbsp tomato paste. (We've also added chicken or bone broth to this if we've had some on hand.) 

Let all of that cook for 5-10 minutes or until all of the chicken is cooked. And we like to serve it straight out of the iron skillet with some chips, a little cheese, and sour cream. You could also add avocado and cilantro if you wanted. It's so tasty!! 

It's easily one of the prettiest meals while it's cooking! 
And so fun to see all of the veggies you're getting in such a yummy dish. This is even before the zucchini is cut. 
And as I was looking back to find these pictures, here's a little snapshot of 5 month old little Jane hanging while I made this one fall night last year. Haha!! Even she was a fan!!
