From the Riddick Kitchen - Açaí Bowls

Happy Tuesday!!! Today a From the Riddick Kitchen post is coming your way with something that gets made quite often here in the Riddick home - Açaí bowls. 
Let me tell you, we are a sucker for a good açaí bowl! Last summer, we visited Pierce's brother and sister-in-law in DC and had a nutella acai bowl that we still dream about. That pretty much propelled us into franchising an açaí bowl restaurant in our own kitchen hahaha and I'm only slightly joking...

We make these quite often around here. Sometimes they're simple, sometimes they have all the toppings, and sometimes we improvise with what we don’t have on hand and work with what we have, but today I'll share what we do and our favorite "recipe" so to speak for making them!! We have these for breakfast, lunch, an afternoon snack or sometimes even dinner if we need a quick protein-filled meal in a pinch haha 

These are so customizable, but here's what we like to keep on hand!!

Ingredients:
Unsweetened Açaí Packs
Frozen Strawberries
Frozen Blueberries
Frozen Dragon Fruit
Frozen Bananas
Baby Spinach
Peanut Butter
Protein Powder (We LOVE Just Ingredients Vanilla Bean)
Almond Milk (Forgot to take a picture, but we usually do Unsweetened and sometimes mix it with a little Original)
Toppings that you love: Chocolate chips, shredded coconut, granola, hazelnut spread, berries, bananas, the list goes on!! 

Whenever we make it for someone and they ask what we do, we always share this. In our opinion, this is the key ingredient. I love Karalynne from Just Ingredients, and I love her protein powder. She uses non-denatured 100% grass fed whey and real food ingredients, and her Vanilla Bean protein powder is our very favorite. It has a hint of cinnamon, and we add this to everything, from these acai bowls to our almond flour pancakes and everything in-between! 

Directions:

We love using our Vitamix for these. This was a joint birthday gift a few years ago, and we joke that we're running it into the ground using it so much, but it's perfect to mix all of the frozen things and keep it pretty thick!

Add 3-4 pieces of frozen banana (I like to peel them when they're pretty brown/spotted and freeze them in pieces.) 

Add one Acai pack (Biggest tip - cut the top then run it under a little water and it will slide right out into your blender!)

Add about 1 cup strawberries. 

Add 1.5-2 cup blueberries (I think these are what give it the best flavor!) 

Add about 1/2 cup frozen dragon fruit. 

Add 1-1.5 cups spinach (You won't taste it once it's blended!)

Add 2 scoops of protein powder. (And sometimes we add 1 tbsp peanut butter as well.)

Add almond milk or any milk of your choice - maybe 1-1.5 cup to start, and you can always add more if it needs more liquid. 

Blend until smooth then top with toppings! (This also makes enough for two bowls and a little cup for Jane, so you could half most of the fruit if it’s just for one!)

It's as easy as that!! And they are truly delicious!!! What do you add to your smoothies/acai bowls?! We're always looking for fun new ingredients to try and add.
